Maybe I have some misconceptions that need correcting :-)
#1: Always use thread dope/Never use thread seal tape. But there is "special" yellow gas pipe tape sold in stores. What's the rest of the story?
#2: Always use black pipe for gas. But I frequently see galvanized pipe outside of homes and businesses (maybe it continues inside but that's not apparent). When I piped my detached workshop my AHJ told me to use black pipe in the trench and paint roofing tar on it to protect against rust. This seemed like a "redneck" solution then, and still seems so today. I would have felt better using galvanized--adding the tar as extra insurance if required. So my question is "why not use galvanized?"
